Chimay brewery was founded inside Scourmont Abbey, in the Belgian municipality of Chimay in 1862. Chimay today is perhaps the most popular brand of Trappist beer in the world - largely due to the quality and scientific approach that this brewery began to adopt earlier than other Abbey breweries. The Abbey of Notre Dame de Scurmont itself was founded in 1850 by monks who came from the Westlestern Abbey, and in 1862 a brewery was opened there. She suffered greatly during World War II, but immediately after the war they began to restore and expand it, and in 1948, Father Theodore was able to isolate the unique yeast that Shime beer fermented today. An important role in those years was played by the Belgian scientist Jean de Clerk. As a specialist in the field of brewing, he, along with his father Theodore, was able to bring the quality of the brewery to a new level

The brewery produces three ales as well as a patersbier for the monks themselves which is occasionally sold as Chimay Gold; they are known as Trappist beers because they are made in a Trappist monastery.
