Traditional Gose base with pink salt and coriander, acidified by a "wild" culture of bacteria from shalgam - a traditional Turkish fermented drink made from black carrots, chili peppers, bulgur and salt, mixed fermentation. Black carrots could not be found, so they were replaced with a mix of regular carrots and beets.
