The Timmermans Brewery has kept the tradition of producing authentic lambic for 300 years. This beer is brewed in Ytterbek, the oldest and still operating brewery, and on a basis containing 30% wheat. This beer owes its birth to a real miracle: microorganisms that inhabit the air of the Seine River valley penetrate the wort, causing spontaneous fermentation.
