While owner / brewer Corey King says he's an old man by brewing standards, the demand for his barrel-aged varieties is as strong as when the brewery first became his own business - not a side project - two and a half years ago. The brewery plans to produce more barrel-aged stouts this year, bringing back its most acclaimed Beer: Barrel: Time - an imperial bourbon-aged stout for Thanksgiving. The Side Project even opened its own Shared division, a place for brewers to develop new recipes for unfinished beers.
